Salami & Vegetable Skewers
Ingredients

1 x 125g pack Hans Sliced Salami
3-4 fresh mushrooms
1 small zucchini, cut into 4 thick slices
½ capsicum, cut into 3cm squares
2 tbsp olive oil
Salt and pepper
3-4 wooden skewers
1 spring onion, cut into 4cm pieces
4 cherry tomatoes, or semi-dried tomato halves
Bay leaves and/or rosemary sprigs

Method
  • Heat a heavy iron pan, or nonstick pan and moisten with olive oil
  • On high heat, lightly brown the mushrooms, zucchini and capsicum for approximately 3 minutes
  • Season with salt and pepper
  • Fold salami slices and thread onto skewers, alternating with pieces of zucchini, spring onion, capsicum, herbs and whole cherry tomatoes
  • Warm in the same pan
  • Serve with steamed or fried rice, herbed pasta, or potatoes
